WHere is an easy version of a cocktail featured on a new drinks list. It's a batch pre-mixed that's bursting with the flavours associated with Christmas time, making it excellent for a celebration. Save the extra cordial for breakfast cocktails, puddings, or to mix additional servings of bikinis.
Bikini
Yields 10 people
For the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Cocktail (makes 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
To prepare the Citrus Syrup: Combine all the ingredients into a pan, heat until it reaches a gentle boil, mixing to dissolve. Next, remove from the heat and leave to reach room temperature fully. Decant to a sealable bottle, seal and store chilled, where it will keep for around one month.
Preparing the Premix: Mix the specified liquid ingredients in a sizeable container, allow it to infuse for one hour, then pass it through preferably using a fine cloth, so it's perfectly clear.
To serve: Add 85ml of your premix into a mixing glass packed with ice, and agitate carefully for about 60 seconds to chill. Strain into a frosted cocktail glass or similar, decorate with some cranberries and finish with a brief mist of the essential oil above the glass.
